Chicken Bhujing Recipe - Popular Street Food of Mumbai - The Bombay Chef – Varun's Getaway | Get Curried

Learn how to make Chicken Bhujing, Varun's style as he takes us out from the kitchen to his farmhouse in Alibaug only on Get Curried.

Chicken Bhujing is an easy to make and popular street food of Virar (Mumbai) in which chicken and potatoes are mixed with many spices, grilled and cooked with some flattened rice.

Chicken Bhujing

1 kg chicken on bone ( skinless)
1/4 kg potatoes with skin ( thick slices)

For Cooking
2 tbsp oil
1 medium sized onion (sliced)
2 handfuls poha / flattened rice

Dry rub
1 tbsp jeera crushed
1 tbsp coriander crushed
1.5 tbsp turmeric powder
1 tbsp salt

Spice mix
1/2 cup dry coconut (roasted on coal)
6 green chillies
10-12 garlic cloves
8 green cardamon pods
2 inch pieces of cinnamon
10 cloves

Method:
- For dry rub 1 tbsp jeera crushed, 1 tbsp coriander crushed, 1.5 tbsp turmeric powder, 1 tbsp salt and crush it on stone grinder.

- Marinate the chicken and potato pieces with the dry spice mix.

- Place the potato and chicken pieces on a skewer and barbecue it.

- In an earthen pot heat some oil, add sliced onions, the roasted chicken and potatoes, some water cover it and let it cook for 12-15 mins

- For the spice mix, take 1/2 cup dry coconut (roasted on coal), 6 green chillies, 10-12 garlic cloves, 8 green cardamom pods, 2 inch pieces of cinnamon, 10 cloves and crush it.

- Transfer the spice mix into the pot

- Add flattened rice and mix well.

- Chicken Bhujing is ready to be served.
