2. LAJAWAAB CHICKEN BIRYANI
INGREDIENTS:

Chicken - 1500gms
chilli powder - 1 tsp
coriander powder - 1tsp
cumin powder - 1tsp
garam masala powder - ½ tsp
salt - as per taste
oil - as required
mint leaves - 1 tsp
green chillies - 5 nos.
yogurt - 1 cup
sesame seeds - 50gms
peanuts - 70gms
coconut powder - 2 tsp
chilli powder - 1 tsp
coriander powder - 1 tsp
coriander leaves - 1 bunch
lemon juice - 1 tsp
tomato - 8 nos.
cloves - 5 nos.
cardamom - 4 nos.
mace - 1 no.
shahi jeera - 1 tsp
bay leaf - 1 no.
black cardamom - 3 nos.
star anise - 2 nos.
cinnamon - 2nos.
lemon pieces - 1 no.
basmati rice (soaked) - 1 kg
brown onions - 2 tsp
mint leaves - 1 tsp
coriander leaves - 1 bunch
saffron water - 1 tsp
mustard seeds - 1 tsp
red chillies - 5 nos.
cumin seeds - 1 tsp
fenugreek seeds - ½ tsp
onion seeds - 1 tsp
onion - 2 nos.
curry leaves - 1 spring
ginger garlic paste - 1 tsp
turmeric powder - ½ tsp
coriander powder - 1 tsp
sesame seeds - 1 tsp
coconut - 1 tsp
peanut - 1 tsp
tamarind juice - 1 cup
water - as required
green chillies - 5 nos.
jaggery - 1 tsp

DIRECTIONS:

• Take chicken pieces in a pan, add chilli powder, coriander powder, cumin powder, garam masala powder, salt, oil, mint leaves, green chillies, yogurt mix it well and marinate it.

• Take sesame seeds, peanuts, coconut powder in a plate, add chilli powder, coriander powder, salt, coriander leaves, lemon juice mix it well.

• Take tomato the made a hallow and stuff the masalas like as shown in the video.

• Heat water in a pan, add salt, cloves, cardamom, mace, shahi jeera, bay leaf, black cardamom, star anise, cinnamon, lemon pieces, oil, soaked basmati rice mix it once and cook it for 75% close the lid on.

• Now, cook the chicken, add brown onions, sprinkle the rice, by the toppings with mint leaves, brown onions, coriander leaves, tomatoes, and add some saffron water put the dum and seal pot cook it for 20-25 minutes cook it on the slow flame.

• Heat oil in a pan, add mustard seeds, red chillies, cumin seeds, fenugreek seeds, onion seeds, onion, curry leaves, salt, ginger garlic paste, turmeric powder, coriander powder, cumin powder, chilli powder, sesame seeds, coconut, peanut paste mix it and cook the masalas nicely.

• Then add tamarind juice, water, green chillies, jaggery cook it well.

• Now, take the tomatoes and take a stick make the goals, add the gravy cook it for few minutes. Salan curry is ready.

• Take biryani in a plate, decorate by the toppings with brown onion, mint leaves, boiled egg.
