Chicken Cafreal | Sanjeev Kapoor Khazana

A delicious and flavourful chicken recipe for a fancy dinner or lunch.

CHICKEN CAFREAL

Ingredients

750 grams chicken on the bone, cut into 2 inch pieces
1 tsp cumin seeds
7-8 cloves
1 tbsp coriander seeds
3 green cardamoms
8-10 black peppercorns
1 inch cinnamon stick
1 inch ginger piece, roughly chopped
4-5 garlic cloves, roughly chopped
3-4 green chillies, roughly chopped
Handful of coriander leaves
3 tbsps oil
Fried onions for garnish


Method

1. Dry roast cumin seeds, cloves, coriander seeds, cardamom, black peppercorns, cinnamon stick and sauté for 2-3 minutes or till fragrant. Transfer into a mixer jar.
2. In the same blender jar, add garlic, ginger, green chillies, fresh coriander and some water and grind to a smooth paste.
3. Take the chicken in a large bowl, add the prepared masala and salt and mix well. Keep aside to marinate for an hour.
4. Heat oil in a deep non-stick pan. Add the marinated chicken, mix well. Cover and cook for 15 – 20 minutes or till the chicken is well cooked.
5. Switch off the heat. Add vinegar and mix well.
6. Transfer into a serving plate. Garnish with fried onions.
