Chicken Corn Soup

Ingredients for Chicken Stock/Yakhni:
Chicken bones 1 kg
Carrots 2
Onion (half cut) 2-3
Ginger pods 2-3
Garlic cloves 2-3
Black peppercorns 2 tsp
Bay leaves 2
Water 2 liters

Ingredients for Chicken Corn Soup:
Sweet corn (crushed) 2 cups
Chicken (boiled & shredded) 1 cup
Salt 1 tbsp
Chicken stock/Yakhni 1 liters
Egg whites 2
Slurry (corn flour 4 tbsp + water 1/2 cup)

Directions for Chicken Stock/Yakhni Preparation:
1. In a pot heat water and add carrot, onion, ginger, garlic, chicken bones, black peppercorns, bay leaf and simmer for 1 hour. Remove the scum in between. set aside.
Directions for Chicken Corn Soup Preparation:
2. In another pot add the prepared and strained chicken stock. Now add sweet corns, boiled chicken and bring it to a boil.
3. Now add slurry and cook until it starts to thicken.
4. Add egg whites while stirring continuously. Your Chicken Corn Soup is ready.

Cooking time: 1 hour
