CHICKEN CUPPA NOODLESIngredients200 grams boneless chicken, cut into small pieces200 grams instant noodles1 tablespoon oil1 tablespoon chopped garlic1 fresh red chilli, chopped1 medium onion, slicedSalt to taste6-8 button mushrooms, sliced3-4 tablespoons corn kernels1½ cups chicken stock1 teaspoon light soy sauce2 tablespoons chopped spring onion greens + for garnishingMethod1. Heat oil in a small deep non-stick pan. Add garlic and sauté for 30 seconds. Add red chilli and onion and sauté till onion turns translucent. 2. Add chicken, mix and cook for 1-2 minutes. Add salt and mix. Add mushrooms and corn kernels, mix and cook for 1 minute. 3. Break in noodles, add chicken stock and light soy sauce, mix and cook till noodles are done. 4. Add spring onion greens and mix.5.
