Chicken Cuppa Noodles | Sanjeev Kapoor Khazana

CHICKEN CUPPA NOODLES

Ingredients

200 grams boneless chicken, cut into small pieces
200 grams instant noodles
1 tablespoon oil
1 tablespoon chopped garlic
1 fresh red chilli, chopped
1 medium onion, sliced
Salt to taste
6-8 button mushrooms, sliced
3-4 tablespoons corn kernels
1½ cups chicken stock
1 teaspoon light soy sauce
2 tablespoons chopped spring onion greens + for garnishing

Method

1. Heat oil in a small deep non-stick pan. Add garlic and sauté for 30 seconds. Add red chilli and onion and sauté till onion turns translucent.
2. Add chicken, mix and cook for 1-2 minutes. Add salt and mix. Add mushrooms and corn kernels, mix and cook for 1 minute.
3. Break in noodles, add chicken stock and light soy sauce, mix and cook till noodles are done.
4. Add spring onion greens and mix.
5. Serve hot garnished with some chopped spring onion greens.
