CHICKEN FAJITA PASTA - (Serves - 4)Ingredients250 grams boneless chicken, cut into thin strips1 teaspoon fajita spice mix2 cups farfalle pasta, boiled1 tablespoon oil1 tablespoon chopped garlic1 medium onion, cut into thin roundels and layers separatedSalt to taste1 teaspoon cumin powder1 teaspoon dried oregano¼ medium red bell pepper, cut into juliennes¼ medium yellow bell pepper, cut into juliennes1 tablespoon red chilli sauceCrushed black peppercorns to taste1 tablespoon chopped fresh coriander leavesMethod1. Heat oil in a non-stick pan. Add garlic and sauté for 30 seconds. 2. Add onion and sauté till translucent. Add salt and mix. Add chicken, mix and cook for 1-2 minutes.3. Add cumin powder, oregano, red bell pepper, yellow bell pepper, chilli sauce and crushed peppercorns, mix and cook for 1 minute. 4. Add coriander leaves and fajita spice mix and mix well. Add pasta, mix and cook for 1 minute. Reduce heat and cook for 2-3 minutes. 5.
