Truly marvelous!CHICKEN IN BURNT CHILLI SAUCEIngredients 450 grams boneless chickenlegs,cut into cubes2 tablespoons red chilli pasteSalt to tasteCrushed black peppercorns to taste1 tablespoon chilli oil1-2 green chillies, finely chopped2-3 dried red chillies, diagonally slices1 inch ginger, finely chopped2 inch celery, finely chopped1 tablespoon chopped garlic1 teaspoon soy sauce½ cup mixed bell peppers, cut into triangles¼ cup chopped fresh coriander leaves1 spring onion greens, finely chopped1 teaspoon vinegarMethod1. Take chicken in a bowl. Add salt and crushed peppercorns and mix well. Set aside.2. Heat chilli oil in a non-stick pan. Add chicken, toss to mix and cook on high heat till done. Transfer onto a plate.3. Add green chillies to the same non-stick pan and sauté for 30 seconds. Add dried red chillies and sauté till fragrant. Add ginger and celery and sauté for 30 seconds. Add garlic and sauté till golden. 4. Add red chilli sauce, mix and cook for a minute or till oil separates. Add some water and mix. Add soy sauce and mix well.5. Add chicken and toss to mix. Add bell peppers and toss well. Add salt, crushed peppercorns and mix well.6. Add chopped coriander, spring onion greens and vinegar and toss to mix.7.
