Chicken in Burnt Chilli Sauce | Sanjeev Kapoor Khazana

Juicy and tender chicken pieces smothered in a spicy garlic-y flavourful sauce. Truly marvelous!

CHICKEN IN BURNT CHILLI SAUCE

Ingredients

450 grams boneless chickenlegs,cut into cubes
2 tablespoons red chilli paste
Salt to taste
Crushed black peppercorns to taste
1 tablespoon chilli oil
1-2 green chillies, finely chopped
2-3 dried red chillies, diagonally slices
1 inch ginger, finely chopped
2 inch celery, finely chopped
1 tablespoon chopped garlic
1 teaspoon soy sauce
½ cup mixed bell peppers, cut into triangles
¼ cup chopped fresh coriander leaves
1 spring onion greens, finely chopped
1 teaspoon vinegar

Method

1. Take chicken in a bowl. Add salt and crushed peppercorns and mix well. Set aside.
2. Heat chilli oil in a non-stick pan. Add chicken, toss to mix and cook on high heat till done. Transfer onto a plate.
3. Add green chillies to the same non-stick pan and sauté for 30 seconds. Add dried red chillies and sauté till fragrant. Add ginger and celery and sauté for 30 seconds. Add garlic and sauté till golden.
4. Add red chilli sauce, mix and cook for a minute or till oil separates. Add some water and mix. Add soy sauce and mix well.
5. Add chicken and toss to mix. Add bell peppers and toss well. Add salt, crushed peppercorns and mix well.
6. Add chopped coriander, spring onion greens and vinegar and toss to mix.
7. Serve hot.

Preparation Time: 5-8 minutes
Cooking Time: 10-12 minutes
