Minced chicken cutlet coated with egg and coated with breadcrumbs.CHICKEN KABIRAJ Ingredients1½ cups chicken mince1 medium onion, chopped2 teaspoons garam masala powderSalt to tasteCrushed black peppercorns to taste1 teaspoon chopped green chillies1 tablespoon chopped garlic ½ tablespoon chopped ginger1 tablespoon chopped fresh coriander leaves4 eggs2 tablespoons cornstarch 1½ cups breadcrumbsOil for shallow-frying and greasing Method1. Take chicken mince in a bowl. Add onion, garam masala powder, salt, crushed peppercorns, green chillies, garlic and ginger and mix well. Add chopped coriander and mix well. Refrigerate for 30-45 minutes.2. Break eggs in a bowl. Add salt, crushed peppercorns and cornstarch and whisk well. Add some water and whisk well.3. Spread breadcrumbs on a plate.4. Heat oil in a non-stick pan. 5. Grease your palms with some oil. Divide the prepared chicken mixture into equal portions and shape them into cutlets. Dip in egg mixture and coat in bread crumbs.6. Shallow-fry the prepared cutlets on medium heat till golden and crisp from both sides. Pour the remaining egg mixture over cutlets and fry till the egg is cooked. Drain on absorbent paper.7.
