Wholesome lettuce cups with rice and chicken mixture. A must try recipe !

CHICKEN LETTUCE CUPS

Ingredients

450 grams boneless chicken legs
Iceberg lettuce cups as required
1 tablespoon sesame oil
2-3 teaspoons light soy sauce
3 tablespoons corn syrup
Salt to taste
2 teaspoons red chilli flakes
1 tablespoon chopped garlic
1 inch ginger, grated
Crushed black peppercorns to taste
2-3 medium shallots, finely chopped
1 tablespoon mirin
1 tablespoon oil
Cooked rice as required
1-2 fresh red chillies
Red chilli sauce as required
Finely chopped spring onion greens as required
Toasted white sesame seeds for topping

Method

1. To prepare marinade, combine sesame oil, soy sauce, corn syrup, salt, chilli flakes, garlic, ginger, crushed peppercorns, shallots and mirin in a bowl and mix well.
2. Make insertions on chicken legs, add to the marinade and mix well. Set aside for 3-4 hours.
3. Heat oil in a non-stick pan. Place marinated chicken pieces along with marinade and cook equally from both sides for a minute.
4. Reduce heat, cover and cook for 8-10 minutes or till chicken is fully done.Transfer the cooked chicken ona plate reserving the cooked marinade.
5. Roughly slice the cooked chicken legs.
6. Place a lettuce cup into a bowl. Put some cooked rice in it.
7. Finely chop red chillies.
8. Pour some cooked marinade and chilli sauce on top of rice. Put some sliced chicken, chopped red chillies, some spring onion greens on itand top with sesame seeds.
9. Serve hot.

Preparation Time: 3-4 hours
Cooking Time:20-25 minutes
