Chicken Malai Seekh Kabab Biryani

Ingredients for Chicken Malai Seekh Kabab:
Chicken mince 800 g
Cream 1/4 cup
Butter 2 tbsp
Salt 1 tsp
Red chili powder 1 tbsp
Coriander powder 1 tbsp
Cumin powder 1 tsp
Garam masala powder 1 tbsp
Onion (small cubes) 1/4 cup
Green chilies 2-3
Melted butter 2 tbsp
Green coriander (chopped) 1 cup
Mint leaves 1/4 cup
Ginger pods 4
Garlic cloves 8
Oil (for frying) as required

Ingredients for Biryani:
Rice (boiled) 4 cups
Oil 1/2 cup
Onion (sliced) 1 cup
Tomatoes (sliced) 2 cups
Yogurt 1 cup
Water 1 cup
Cumin seeds 1 t sp
Cinnamon stick 1
Black cardamom 1
Green cardamom 2
Clove 3
Star anise 1
Black peppercorns 1 tsp
Bay leaf 1
Tamarind 1 tbsp
Salt 1 tbsp / to taste
Red chili powder 1 tbsp
Garam masala powder 1 tbsp
Coriander powder 1 tbsp
Cream 3 tbsp
Green chilies (sliced) for garnishing
Mint leaves for garnishing
Green coriander for garnishing
Ginger (julienne) for garnishing
Fried onion for garnishing
Lemon slices for garnishing
Prepared chicken malai seekh kabab

Directions for Chicken Malai Seekh Kabab Preparation:
1. In a blender add ginger, garlic, mint leaves, green coriander, onion, green chilies and chop well. Add chicken and chop again.
2. Transfer the mixture to a bowl and add salt, cream, butter, red chili powder, coriander powder, cumin powder, garam masala powder and mix it well.
3. Now take a hand full of this prepared mince mixture and tread it on skewers in a seekh kabab shape. Remove these kababs carefully from skewers.
4. Now shallow fry them for 3-4 mins or until fully done. Your Chicken Malai Seekh Kabab are ready. Set aside.
Directions for Biryani preparation:
5. In a pot heat oil and add onion. Cook for 1-2 mins.
6. Add cumin seeds, cinnamon stick, black cardamom, green cardamom, clove, star anise, black peppercorns, bay leaf and cook for a min. add yogurt and cook for another minute.
7. Now add tamarind, salt, red chili powder, garam masala powder, salt, coriander powder and cook until oil separates.
8. Add tomatoes and cook for 1-2 mins. Add hot water, cream and cover and cook for 4-5 mins.
9. Add fried chicken malai seekh kabab and cook for another min.
10. Now in another pot add layers of boiled rice, green chilies, green coriander, mint leaves, ginger, fried onion, lemon slices, prepared kabab biryani masala and cover and steam over low flame for 7-10 mins.
11. Your Chicken Malai Seekh Kabab Biryani is ready. Serve and enjoy.
