Chicken mince mixed with oriental spices and ingredients, shaped into meatballs skewered and grilled.CHICKEN MEATBALL SKEWERSIngredients250 grams chicken mince 2-3 shallots, finely chopped1 tablespoon chopped garlic1 inch ginger, finely chopped1 stalk spring onion greens, choppedSalt to tasteCrushed black peppercorns to taste1 tablespoon toasted white sesame seeds1 teaspoon castor sugar1 teaspoon light soy sauce1 tablespoon groundnut oil + for greasing½ cup diced mixed bell peppersSweet chilli sauce for drizzling Method1. Combine chicken mince, shallots, garlic, ginger, some spring onion greens, salt, crushed peppercorns, sesame seeds, castor sugar and soy sauce in a bowl and mix well. 2. Grease your palm with some oil.Divide the mixture into equal portions and shape them into balls.3. Skewer 1 yellow pepper, meatball, 1 green capsicum, another meatball and 1 red pepper onto each satay stick. Repeat till all the meatballs and peppers are used. 4. Heat 1 tablespoon oil in a non-sick pan. Place each skewer and cook equally from all sides till evenly golden. Drain on absorbent paper.5.
