Chicken Meatball Skewers | Sanjeev Kapoor Khazana

Chicken mince mixed with oriental spices and ingredients, shaped into meatballs skewered and grilled.

CHICKEN MEATBALL SKEWERS

Ingredients

250 grams chicken mince
2-3 shallots, finely chopped
1 tablespoon chopped garlic
1 inch ginger, finely chopped
1 stalk spring onion greens, chopped
Salt to taste
Crushed black peppercorns to taste
1 tablespoon toasted white sesame seeds
1 teaspoon castor sugar
1 teaspoon light soy sauce
1 tablespoon groundnut oil + for greasing
½ cup diced mixed bell peppers
Sweet chilli sauce for drizzling

Method

1. Combine chicken mince, shallots, garlic, ginger, some spring onion greens, salt, crushed peppercorns, sesame seeds, castor sugar and soy sauce in a bowl and mix well.
2. Grease your palm with some oil.Divide the mixture into equal portions and shape them into balls.
3. Skewer 1 yellow pepper, meatball, 1 green capsicum, another meatball and 1 red pepper onto each satay stick. Repeat till all the meatballs and peppers are used.
4. Heat 1 tablespoon oil in a non-sick pan. Place each skewer and cook equally from all sides till evenly golden. Drain on absorbent paper.
5. Place the cooked skewers onto a serving plate and drizzle some sweet-chilli sauce over.Serve hot garnished with remaining spring onion greens.

Preparation Time: 8-10 minutes
Cooking Time: 10-12 minutes
