How to make meatball spaghetti in homemade cranberry sauce, sharing a super simple and easy meatball recipe. I've use ground chicken in this recipe but you can use any meat of your choice. Cranberry sauce is also homemade with natural sweeteners.

Meatball Spaghetti Ingredients

300 g ground chicken
1 medium onion chopped
3 chopped green chillies
1 large egg
Salt to taste
1 tsp chilli flakes
1 tsp soy sauce
1/2 cup golden bread crumb
2 - 3 tsp milk
2 tsp olive oil
3 chopped garlic cloves
1 1/2 cup cranberry sauce
1/4 cup barbecue sauce
1/2 cup chicken stock
1/2 cup water
salt to taste
250 g boiled spaghetti
Chopped coriander for garnishing


Cranberry Sauce Recipe -
In a small saucepan add 250g fresh cranberries, 1 medium apple (peeled & chopped), 12 dates (chopped), 1 1/2 cup water, juice and zest of 1 orange, pinch of salt and 1/2 tsp ginger powder. Simmer for about 10 - 12 minutes over low - medium heat or until cranberries have broken down. Then mash the apples and cranberries with a masher. Simmer for 2 more minutes and then turn off the heat. Let it cool completely, then transfer into a glass jar. You can store it in the refrigerator up to 3 weeks.
