Wholesome salad made with chicken mince and rice.CHICKEN MINCE SALADIngredients 2 boneless chicken breasts Salt to taste 1 teaspoon paprika powder 1 teaspoon lemon juice 1 tablespoon oil 1 cup cooked rice 1 medium tomato, finely chopped 1 celery stalk, finely chopped 1 green chilli, finely chopped 1 tablespoon chopped fresh mint leaves 1 teaspoon sugarΒΌ cup crushed and roasted peanuts Method 1. Sprinkle salt, paprika powder and drizzle lemon juice over the chicken. 2. Heat oil in a non-stick frill pan, place chicken and cook till the grill marks appear on both the sides. Cool. 3. Roughly chop chicken. Transfer into a bowl. 4. Add rice, tomatoes and mix well. 5. Add celery, chillies, mint leaves and mix well. 6. Add sugar, salt and pepper powder and mix well. 7.
