Chicken Proso Soup - #MilletKhazana Sanjeev Kapoor Khazana

A healthier twist to the chicken soup with proso millet. Try this protien rich warm soup today.

CHICKEN PROSO SOUP

Ingredients

150 grams chicken mince
1 cup proso millet
1 tbsp olive oil
1 tbsp sliced garlic
2 tbsps chopped leeks
2-3 baby corns, sliced
cup chopped button mushrooms
cup small broccoli florets
Salt to taste
Crushed black peppercorns to taste
cup chopped tomato
cup tomato puree
2 tbsps chopped spring onion greens + for garnish

Method

1. Take proso millet in a large bowl, add water and let it soak for 2-3 hours.
2. Heat olive oil in a deep pan, add garlic and saut till golden brown. Add leeks, mix and cook for 1-2 minutes.
3. Add baby corns, button mushrooms, broccoli, and saut for 2-3 minutes. Add chicken mince, salt, and crushed black peppercorns and saut on high heat for 2-3 minutes.
4. Add tomato, mix and cook for 1-2 minutes. Add tomato puree, soaked proso, 3-4 cups water, mix well and cook for 8-10 minutes.
5. Add spring onion greens and mix well. Switch the heat off, transfer into a serving bowl, garnish with spring onion greens and serve hot.
