Ingredients:-For the marination:-1 kg chicken¼ tsp. turmeric powder1 tsp. saltPaste 1 for marination:-To be ground to a paste2” ginger10 cloves of garlic½ bunch of coriander5 spicy green chilliesPaste 2 for Xacuti Masala:-1 tbsp oil2 onions sliced3 green chillies1” ginger5 cloves of garlic1 coconut grated½ a bunch of corianderPaste 3 for Xacuti Masala:-2” cinnamon3 green cardamom pods1 tsp. aniseeds1 tsp. Black peppercorns1 tbsp poppy seeds1 tbsp coriander seeds10 Kashmiri chillies1 star anise1 mace¼ piece of nutmegFor Finishing:-2 tsp. Groundnut oil2 onions sliced3 green chillies slit¼ cup waterMethod:-1. Add salt and turmeric powder to the chicken, add paste 1 and marinade for ½ an hour.2. For paste 2 heat 1 tbsp oil and sauté the sliced onions, chillies, ginger and garlic for a few minutes.3. Add the coconut and sauté for 7-10 minutes till the onions are crisp and grind to a fine paste along with the coriander.4. To make paste 3 dry roast all the ingredients and mix with paste 2 ingredients and then grind to a fine paste.5. Heat oil in a pan and add the onion and green chillies and sauté.6. Then add the marinated chicken and sauté for 3-4 minutes.7. Then add the ground paste and mix well.8. Add some water and salt and cover and cook till the chicken is done.9.
