CHICKEN SALADIngredients2 boneless chicken breastsSalt to tasteCrushed black peppercorns to taste¼ tablespoon chopped ginger1 tablespoon chopped garlic3 tablespoons olive oil1 tablespoon vinegar½ teaspoon fresh thyme1 teaspoon red chilli flakes¼ cup light mayonnaise½ cup low fat yogurt1 tablespoon lemon juice1 tablespoon mustard paste1 tablespoon Worcestershire sauce¼ cup fresh chopped coriander leaves1 spring onion bulb, chopped1 medium green capsicum, cut into strips½ medium avocado, peeled and cut into cubes¼ cup chopped celery1 cup shredded lettuce8-10 cherry tomatoes, halved½ cup croutons¼ cup toasted walnuts and almonds + for garnishing ¼ cup spring onion greens + for garnishing1 tablespoon parmesan cheese powderMethod1. Take chicken on a plate. Add salt, crushed peppercorns, ginger, garlic, 1 tablespoon olive oil, vinegar, thyme and chilli flakes and rub well. Refrigerate for 30-45 minutes.2. To make the dressing, combine mayonnaise, yogurt, lemon juice, mustard paste, Worcestershire sauce, 1 tablespoon olive oil, chopped coriander, salt and crushed peppercorns in a bowl and mix well. Refrigerate to cool. 3. Combine spring onion bulb, capsicum, avocado, celery, lettuce and cherry tomatoes in another bowl and mix well.4. Heat remaining oil in a non-stick pan. Place marinated chicken and cook on each side for 2-3 minutes. Remove from heat and transfer onto a plate.5. Add spring-onion mixture to the dressing and mix well. Add croutons, walnuts, almonds, spring onion greens and remaining chopped coriander and mix well. Add parmesan cheese powder and mix again. 6. Slice cooked chicken breasts diagonally. 7.
