Chicken Salad | Sanjeev Kapoor Khazana

CHICKEN SALAD

Ingredients

2 boneless chicken breasts
Salt to taste
Crushed black peppercorns to taste
¼ tablespoon chopped ginger
1 tablespoon chopped garlic
3 tablespoons olive oil
1 tablespoon vinegar
½ teaspoon fresh thyme
1 teaspoon red chilli flakes
¼ cup light mayonnaise
½ cup low fat yogurt
1 tablespoon lemon juice
1 tablespoon mustard paste
1 tablespoon Worcestershire sauce
¼ cup fresh chopped coriander leaves
1 spring onion bulb, chopped
1 medium green capsicum, cut into strips
½ medium avocado, peeled and cut into cubes
¼ cup chopped celery
1 cup shredded lettuce
8-10 cherry tomatoes, halved
½ cup croutons
¼ cup toasted walnuts and almonds + for garnishing
¼ cup spring onion greens + for garnishing
1 tablespoon parmesan cheese powder

Method

1. Take chicken on a plate. Add salt, crushed peppercorns, ginger, garlic, 1 tablespoon olive oil, vinegar, thyme and chilli flakes and rub well. Refrigerate for 30-45 minutes.
2. To make the dressing, combine mayonnaise, yogurt, lemon juice, mustard paste, Worcestershire sauce, 1 tablespoon olive oil, chopped coriander, salt and crushed peppercorns in a bowl and mix well. Refrigerate to cool.
3. Combine spring onion bulb, capsicum, avocado, celery, lettuce and cherry tomatoes in another bowl and mix well.
4. Heat remaining oil in a non-stick pan. Place marinated chicken and cook on each side for 2-3 minutes. Remove from heat and transfer onto a plate.
5. Add spring-onion mixture to the dressing and mix well. Add croutons, walnuts, almonds, spring onion greens and remaining chopped coriander and mix well. Add parmesan cheese powder and mix again.
6. Slice cooked chicken breasts diagonally.
7. Serve chicken breasts with prepared salad garnished with chopped almonds, walnuts and spring onion greens.

Preparation Time: 50-60 minutes
Cooking Time: 8-10 minutes
