Do try it and let us know how you like it. #foodfusion #happycookingtoyou #recipes #digitalammi #arraywah Written Recipe: https://bit.ly/3TeQMCjRecipe in English:Ingredients:Prepare Rara Masala:-Tez patta (Bay leaves) 2-Kashmiri lal mirch (Kashmiri red chillies) 2-Sabut dhania (Coriander seeds) 1 & tbs-Zeera (Cumin seeds) 1 & tbs-Laung (Cloves) 3-4-Saunf (Fennel seeds) 1 tsp-Sukhi lal mirch (Dried red chillies) 4-5-Sabut kali mirch (Black peppercorns) 1 tsp-Darchini (Cinnamon sticks) 2Prepare Seekh Rara:-Chicken qeema (Mince) 450g-Hara dhania (Fresh coriander) chopped handful-Pyaz (Onion) finely chopped 1 medium-Himalayan pink salt tsp or to taste-Adrak lehsan paste (Ginger garlic paste) 1 tbs-Lal mirch powder (Red chilli powder) 1 tsp or to taste -Hari mirch (Green chilli) chopped 1 tbs-Podina (Mint leaves) chopped 1-2 tbs -Ghee (Clarified butter) 1 tbs-Lemon juice 1 & tbs-Baisan (Gram flour) 2 tbs (optional)-Cooking oil 3-4 tbs-Koyla (Charcoal) for smoke Prepare Gravy:-Cooking oil 3 tbs-Pyaz (Onion) finely chopped 2 medium-Tamatar (Tomatoes) finely chopped 2-3 medium-Adrak lehsan paste (Ginger garlic paste) tbs-Haldi powder (Turmeric powder) 1 tsp-Himalayan pink salt tsp or to taste-Chicken qeema (Mince) 300g-Water 1 Cup or as required -Water 1 Cup-Hara dhania (Fresh coriander) chopped Directions:Prepare Rara Masala:-In a frying pan,add bay leaves,kashmiri red chillies,coriander seeds,cumin seeds,cloves,fennel seeds, dried red chillies,black peppercorns,cinnamon sticks & dry roast on low flame until fragrant.-Let it cool.-In a spice mixer,add roasted spices & grind well.Rara masala is ready!Prepare Seekh Rara:-In a large dish,add chicken mince,fresh coriander,onion,2 tbs of prepared rara masala,pink salt, ginger garlic paste,red chilli powder,green chilli,mint leaves,clarified butter,lemon juice & mix well.-If the batter becomes runny,add 2 tbs of gram flour & mix well.-Take a small quantity of mixture (60g) & make kababs on wooden skewer (makes 8-10).-In a wok,add cooking oil & fry kababs on low flame from all sides until golden brown.-Give coal smoke for 2 minutes.Prepare Gravy:-In the same wok,add onion & saut until translucent.-Add tomatoes,ginger garlic paste,mix well & cook for 2-3 minutes.-Add turmeric powder,pink salt,remaining rara masala & mix well.-Add chicken mince,mix well & cook on medium flame for 2-3 minutes.-Add water & mix well,cover & cook on medium flame for 10-12 minutes then cook on high flame until oil separates. -Add water & mix well.-Add prepared seekh kabab,fresh coriander,cover & simmer on low flame for 4-5 minutes & serve!Recipe in Urdu:Directions:Prepare Rara Masala:-Frying pan mein tez patta,kashmiri lal mirch,sabut dhania,zeera,laung,saunf,sukhi lal mirch,sabut kali mirch aur darchini dal dein aur halki ancch per khushbu ajanay tak dry roast ker lein.-Thanda ker lein.-Spice mixer mein roasted spices dal ker ache tarhan grind ker lein.Rara masala tayyar hai.Prepare Seekh Rara:-Badi dish mein chicken qeema,hara dhania,pyaz,2 tbs tayyar rara masala,pink salt,adrak lehsan paste,lal mirch powder,hari mirch,podina,ghee aur lemon juice dal ker ache tarhan mix ker lein.-Agar mixture ziyada runny ho tou baisan dal ker ache tarhan mix ker lein.-Mixture ki small quantity (60g) lein aur wooden skewer per kabab bana lein (makes 8-10).-Karahi mein cooking oil dal dein aur halki ancch per kabab ko tamam sides sa golden brown ho janay tak fry ker lein.-2 minutes kliya koyla ka dhuwan dein.Prepare Gravy:-Us he karahi mein pyaz dal dein aur translucent ho janay tak saut ker lein.-Tamatar & adrak lehsan paste dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.-Haldi powder,pink salt aur remaining rara masala dal ker ache tarhan mix ker lein.-Chicken qeema dal ker ache tarhan mix karein aur darmiyani ancch per 2-3 minutes kliya paka lein.-Pani dal ker ache tarhan mix karein aur dhak ker darmiyani ancch per 10-12 minutes kliya paka lein phir tez ancch per oil alag ho janay tak paka lein.-Pani dal ker ache tarhan mix karein.-Tayyar seekh kabab aur hara dhania dal ker dhak dein aur halki ancch per 4-5 minutes kliya paka lein & serve karein!
