Chicken Thai Rice | Sanjeev Kapoor Khazana

Cook jasmine rice tossed with minced chicken in thai green curry paste and coconut milk.

CHICKEN THAI RICE

Ingredients

250 grams chicken mince
1 tablespoon Thai green curry paste
2 cups cooked jasmine rice
1 tablespoon oil
7-8 garlic cloves
1 teaspoon chopped fresh red chillies
1 medium onion, sliced
Salt to taste
Crushed black peppercorns to taste
½ cup coconut milk
Fried basil leaves for garnishing

Method

1. Heat oil in a non-stick wok.
2. Slice garlic, add to pan and sauté till golden. Add fresh red chillies and onions, mix and sauté till onion turns golden.
3. Add Thai green curry paste and mix well. Add chicken mince and salt, mix well and cook for 2-3 minutes.
4. Add rice and crushed peppercorns, mix and cook for a minute. Add coconut milk and some water, mix, cover and cook on low heat for 2-3 minutes.
5. Serve hot garnished with fried basil leaves.

Preparation Time: 5-8 minutes
Cooking Time: 20-25 minutes
