Thukpa is very common in pahadi or himalayan areas such as Tibet, Nepal, Bhutan, Assam, Sikkim. Chicken Thukpa is basically noddle soup served with chicken and healthy veggies. This winter season, make this hot soupy noodle and conquer your hunger craving.Ingredients: (Serves 4)For Stock :- 400 gm Chicken- 10 cup Water- 1 Onion (Sliced)- 7-8 Garlic ClovesFor Paste :- 1 Tomato- 1 Onion (diced)- 2 tbsp Coriander leaves (chopped)- 3-4 Garlic cloves- 1/2" Ginger- 1 Bird Eye Chili- 1 tsp Schezwan PepperFor Thukpa:- 1 tbsp Oil - Paste- Chicken Stock- 1 cup Carrot ( Julienne)- 1 cup Cabbage ( shredded )- Salt- Noddles (boiled)- Chicken ( boiled and shredded)- Chilli Soy Sauce- Spring Onions- Coriander Leaves Method :1. Prepare Chicken stock with chicken, water, large onion and garlic. 2. Take a grinder, add tomato, onion, coriander leaves, garlic, ginger, bird eye chilli and schezwan pepper in to it, blend and make fine paste.3. Heat oil in a wok, add prepared paste into it and saute for 3-4 min.4. Now add sliced carrot and shredded cabbage in it and toss well.5. After that add chicken stock and salt, boil it for some time.6. Take some noodles in a bowl, add stock, shredded chicken and chilli soy sauce in it.7. Garnish it with spring onions and coriander leaves.
