CHICKEN WRAPPED PRAWNS

Ingredients

250 grams boneless chicken breasts, cut into thin strips
12-16 prawns, shelled and deveined with tails intact
1 tablespoon oil + for deep-frying
2 teaspoons cornstarch
Salt to taste
Crushed black peppercorns to taste
1 tablespoon ginger-garlic paste
½ teaspoon red chilli powder
1 egg
1 tablespoon chopped garlic
2 green chillies, chopped
1 tablespoon red chilli sauce
1 teaspoon tomato ketchup
1 tablespoon soy sauce
4-5 fresh basil leaves + for garnishing

Method

1. Insert a toothpick through each prawn. Wrap the prawns with the
chicken strips. Set aside.
2. Heat sufficient oil in a pan.
3. Combine cornstarch, salt, crushed peppercorns, ginger-garlic
paste, chilli powder and egg in a bowl. Whisk well with a little
water to make a smooth batter.
4. Dip the chicken wrapped prawns in the batter and deep-fry in hot
oil till golden. Drain on absorbent paper.
5. Heat 1 tablespoon oil in a non-stick pan. Add garlic and sauté till
light golden.
6. Add green chillies, mix and sauté. Add chilli sauce, tomato
ketchup and soy sauce, mix well and cook for 2 minutes.
7. Add little water and mix well. Add salt, crushed peppercorns,
torn basil leaves and fried wrapped prawns. Mix well and cook
for a minute.
8. Garnish with basil leaves and serve hot with salad leaves.

Preparation Time: 15-20 minutes
Cooking Time: 18-20 minutes
