Chill Garlic Pot Sticker Noodle Bowl Sanjeev Kapoor Khazana

A mouth-watering bowl of spicy noodles and chicken mince-stuffed wontons laid atop green spring onions and a garnish of spring onion greens.

CHILLI GARLIC POT STICKER NOODLE BOWL

Ingredients

300 grams chicken mince
8 round wonton wrappers
Salt to taste
2 fresh red chilies, finely chopped
1 tsp finely chopped ginger
1 tsps chopped celery
2 tsps finely chopped garlic
Crushed black peppercorns to taste
2-3 spring onion bulbs, finely chopped
3 tbsps finely chopped spring onion greens
1 tsp dark soy sauce
Refined flour slurry to serve
2 tbsps oil
Noodles
3 cups boiled noodles
2 tbsps oil
1 tbsp finely chopped garlic
1 tbsp red chilli paste
1 tbsp finely chopped celery
tbsp finely chopped ginger
2 spring onion bulbs, vertically sliced
1 cup shredded cabbage
1 small green capsicum, cut into thin strips
Crushed black peppercorns to taste
Salt to taste
1 tsp dark soy sauce
1 tsp red chilli sauce
Chopped spring onion greens for garnish


Method

1. Take chicken mince in a bowl, add salt, fresh red chillies, ginger, celery, garlic, crushed black peppercorns, spring onion bulbs, spring onion greens and dark soy sauce and mix till well combined.
2. Place a portion of the chicken mixture in the centre of each wonton wrapper and apply some refined flour slurry on the edges and fold it in half. Bring the edges close to make a crescent and pinch on one side to seal. These are pot stickers.
3. To make the noodles, heat oil in a non-stick pan. Add garlic and red chilli paste and saut on high heat for 2-3 minutes.
4. Add celery, ginger, onion bulbs, cabbage, and green capsicum and saut on high heat for 1-2 minutes.
5. Add noodles, crushed black peppercorns, salt, dark soy sauce, and red chilli sauce and toss till well combined. Switch the heat off.
6. To make the pot stickers, heat oil in a non-stick shallow pan, place the pot stickers and cook on high heat for 2-3 minutes, reduce the heat to medium, sprinkle 2-3 tbsps water, immediately cover the pan with a lid and cook for 3-4 minutes. Switch the heat off.
7. To assemble, transfer the noodles in a serving bowl, sprinkle spring onion greens, arrange the pot stickers over it. Sprinkle some more spring onion greens and serve hot.
