Spicy popular indo-chinese recipe of batter fried chicken cubes tossed in chilli sauce.CHILLI CHICKENIngredients250 grams boneless chicken, roughly chopped1-2 green chillies, finely chopped1-2 green chillies, slit Salt to tasteCrushed black peppercorns to taste1 egg2 tablespoons cornflour1½ tablespoons refined flour (maida)2 tablespoons oil + for deep-frying4-5 garlic cloves, finely chopped1 medium onion, roughly diced1 medium green capsicum, roughly diced¼ cup chicken stock1 tablespoon soy sauce½ tablespoon sweet chilli sauce1 teaspoon vinegarSpring onion greens for garnishingMethod1. Put chicken in a bowl. Add salt, crushed peppercorns, egg, 1 tablespoon cornflour and refined flour and mix. 2. Heat sufficient oil in a kadai. Deep-fry the chicken pieces till crisp. Drain on absorbent paper. 3. To make the sauce, heat 2 tablespoons oil in a non-stick pan. Add garlic and sauté for a few seconds. 4. Add chopped green chillies, slit green chillies, onion, capsicum and salt, toss well and cook for 2-3 minutes. 5. Add stock, soy sauce, fried chicken pieces, mix well and bring to a boil. 6. Mix together remaining cornflour and remaining stock in a bowl to make slurry. Add this to the sauce, mix and cook till the sauce thickens. 7. Add chilli sauce and vinegar and mix well. 8.
