Green chillies and sausages take this biryani to great heights of deliciousness

CHILLI CHICKEN SAUSAGE BIRYANI

Ingredients

1½ cups basmati rice, soaked for 1 hour
20-25 green chillies
8-10 chicken sausages
Salt to taste
4 one-inch cinnamon sticks
6-7 green cardamoms
1 star anise
8-10 cloves
2 bay leaves
130 gms bhuna masala
½ medium bunch fresh mint leaves
1 tbsp thin strips of ginger
2 tbsps ghee
½ tsp garam masala powder
A few saffron strands mixed with 2 tbsps milk

Method

1. Heat sufficient water in a deep non-stick pan, add salt, cinnamon, green cardamoms, star anise, cloves and bay leaves. When the water boils, drain the rice and add. Cover and cook.
2. Heat a rice cooker, add bhuna masala and saute for 2 minutes. Add green chillies.
3. Cut sausages into ½ inch pieces.
4. Add ¼ cup water to the chillies and mix, cover and cook for a few minutes.
5. Separate mint leaves.
6. When the rice is nearly done, drain and put into the rice cooker. Sprinkle ginger strips, ghee, garam masala powder, mint leaves and saffron milk. Cover and cook on warm mode for 20-25 minutes.
7. Serve hot with pickles.
