Popular recipe of mutton pieces cooked with red kidney beans in spicy tomato gravy.CHILLI CORN CARNEIngredients200 grams mutton, cut into small pieces1 cup boiled kidney beans 3 tablespoons oil2 tablespoons refined flourSalt to tasteBlack pepper powder to taste2 bay leaves1 tablespoon minced garlic1 medium onion, finely chopped2 medium tomatoes, blanched and finely chopped1 teaspoon paprika powder1 teaspoon dried oregano1½ teaspoons roasted cumin powder2 tablespoons tomato puree2 cups chicken stockMethod1. Heat 2 tablespoons oil in a non-stick pan. Add refined flour, salt and pepper powder, mix and sauté. Add mutton pieces, mix and sauté on high heat for a minute. Transfer onto a plate.2. In the same pan, heat the remaining oil. Add bay leaves, garlic and sauté well. Add onion and sauté till it turns translucent.3. Add tomatoes, mix and cook for a minute. Add paprika powder, oregano, cumin powder and salt and mix well. Add tomato puree, mix well and cook on low heat for a minute.4. Add mutton pieces and mix well. Add 1 cup stock, stir to mix, cover and simmer for 20 minutes.5. Add kidney beans, mix well and add remaining stock. Stir to mix, cover and simmer for 5 minutes. 6. Serve hot.
