Chinese rice preparation with chicken and mushrooms- A perfect tiffin treat.CHINESE CHICKEN SAUSAGE RICEIngredients200 grams boneless chicken, cut into cubes2-3 chicken sausage, sliced1½ cups Basmati rice, soaked for 30 minutes2 tablespoons sesame oil1 tablespoon chopped garlic1 medium onion, finely chopped1 tablespoon cornflour4 cups chicken stockSalt to tasteCrushed black peppercorns to taste5-6 button mushrooms, sliced1 tablespoon oyster sauce2-3 teaspoons soy sauce1 teaspoon vinegarFried noodles for servingMethod:1. Heat sesame oil in a non-stick pan. Add garlic and sauté till golden. Add onion and sauté on high heat till golden.2. Add chicken, mix and cook on high heat for 1-2 minutes. Add drained rice, mix and cook for 1 minute. Reduce heat and cook for 1-2 minutes.3. Take cornflour in a bowl. Add ¼ cup stock and mix well to make a smooth slurry.4. Heat stock in a microwave for 1 minute.5. Add salt and crushed peppercorns to rice mixture and mix. Add remaining chicken stock, mix, cover and cook on medium heat for 5 minutes or till rice is half done.6. Add chicken sausage and mushrooms and mix. Add oyster sauce and soy sauce, mix, cover and cook for 5 minutes or till the rice is done.7. Add slurry and vinegar, mix, cover and cook for 1 minute.8.
