Fish fingers marinated with Chinese sauces and crumb fried.CHINESE STYLE FISH FINGERS - (Serves - 4)Ingredients2 basa fish fillets, cut into fingersOil for deep-frying1 tablespoon chopped garlic1-2 fresh red chillies, finely choppedCrushed black peppercorns to tasteSalt to taste1 teaspoon soy sauce2-3 teaspoons oyster sauce + for drizzling6-8 fresh basil leavesFresh breadcrumbs for coating1 eggChopped spring onion greens for garnishingMethod1. Heat sufficient oil in a pan.2. Take fish fingers in a bowl. Add garlic, red chillies, crushed peppercorns, salt, soy sauce and oyster sauce and mix. Add torn basil leaves and mix well.3. Coat marinated fish fingers with breadcrumbs.4. Beat an egg in a shallow plate and dip coated fingers and again coat with breadcrumbs.5. Deep-fry prepared fingers in hot oil till golden and crisp. Drain on absorbent paper.6. Place fried fingers on a serving platter, drizzle some oyster sauce on top and garnish with spring onion greens.7.
