CHOCO BITE MUFFINS

Ingredients

30 grams chopped dark chocolate
100 grams dark chocolate slab
185 grams sugar
200 grams butter
3 eggs
175 grams + 2 tablespoons refined flour (maida)
½ teaspoon baking powder
½ tablespoon instant coffee powder

Method

1. Preheat oven to 180° C.
2. Put butter, sugar and cream in a bowl and beat with an egg beater.
3. Break eggs into the mixture, one at a time, add vanilla essence and continue to beat.
4. Put chopped chocolate in a bowl and melt in a microwave.Temper it and add to the butter-sugar mixture and beat again to combine well.
5. In another small bowl, mix the coffee with little water and heat in a microwave for half a minute. Set aside to cool.
6. Sieve the flour and baking powderinto the butter-sugar mixture and gently fold in till everything is well combined.
7. Add coffee decoction and gently fold into the mixture.
8. Roughly chop chocolate slab, mixhalf of it with two tablespoons refined flourand fold into the mixture.
9. Divide equally into muffin moulds, top it up with the remainingchopped chocolate slab and bake in the preheated oven at 180°C for approximately twenty minutes.
10. Remove the muffins from the moulds and place them on a serving dish. Serve immediately.
