CHOCOLATE CHIP COOKIES - An American Classic

In this episode, I'd like to share with you my version of 'Chocolate Chip Cookies', an American classic, invented by Ruth Graves Wakefield in 1930s. They are soft and chewy in the middle and have crispy edges. And so, so easy to prepare... You can also add chopped walnuts or even more chocolate chips if desired.

INGREDIENTS

1 cup flour
1/4 cup oat flour
1/2 cup brown sugar
1/4 cup granulated sugar
1 cup chocolate chips
1 egg (at room temp)
4 Real tablespoonful butter (at room temp)
1 packet vanilla sugar or 1 tsp vanilla extract
1 packet or 1 tsp baking powder
A pinch of salt

DIRECTIONS

Sift the dry ingredients flour, vanilla sugar, (if using) baking powder, oat flour, a pinch of salt then mix and set aside.
Mix the butter and sugars then beat until light for about 3-4 minutes.
Add the egg and the vanilla extract (if using) then beat another 1-2 minutes.
Stir in dry ingredients in two batches.
Beat until just combined only, for about 30 seconds.
Last but not least stir in the chocolate chips.
(And nuts if desired)
Cover and refrigerate for at least 30 minutes.
When ready to bake, preheat your oven to 175 C (350 F)
Line a baking sheet with parchement paper.
Use two teaspoons, one to scoop up the dough and the second to push the dough onto the baking sheet.
Scoop heaping teaspoons of the dough and place well apart on the baking sheet, the cookies will spread during baking.
Don't over-bake the cookies. I bake them exactly 9 minutes or until light brown on the edges and still slightly soft in the centre.
Refrigerate the remaining dough until needed.
Transfer hot cookies with a spatula to a wire rack to cool.
Allow baking sheet to cool and repeat process with remaining dough.
I have just made 18 cookies.
Crisp edges, soft and chewy middles, they are just perfect!
Let cool and enjoy it with a cup of tea, coffee or a glass of cold milk :)
