Chocolate Hazelnut Cookie Icecream | Sanjeev Kapoor Khazana

Crushed cookies, hazelnut spread and chocolate blended into a delectable ice cream.

CHOCOLATE HALZELNUT COOKIE ICE CREAM

Ingredients

1½ cups chopped dark chocolate
¼ cup chocolate-hazelnut spread
10-12 dark chocolate cookies
1½ cups milk
¼ cup castor sugar
2 egg yolks
1 teaspoon vanilla essence
1½ tablespoons cornstarch
1 cup fresh cream

Method

1. Put castor sugar in a bowl. Add egg yolks and vanilla essence and whisk. Add cornstarch and whisk well.
2. Heat cream in a non-stick pan. Add milk, mix and bring the mixture to boil.
3. Add some hot cream-milk mixture to egg yolks mixture and whisk. Add remaining cream-milk mixture and whisk well.
4. Pout the cream-milk mixture to the pan again and cook till it slightly thickens. Transfer in another bowl.
5. Add dark chocolate to the cream-milk mixture and mix till it melts. Add chocolate-hazelnut spread and mix well.
6. Churn the chocolate hazelnut mixture in an electric blender for 1 minute.
7. Break dark chocolate cookies and put in an air-tight container, pour the ice cream mixture and put remaining broken dark chocolate cookies on top and cover. Freeze for 6-8 hours.
8. Scoop out and serve chilled.
