Delicious dense chocolate cake that you can make at home.CHOCOLATE MUD CAKE Ingredients227 grams dark chocolate chips2 cups refined flour (maida)1¼ cups unsalted butter 2¾ cups castor sugar4 eggs1 tablespoon vanilla essence2 tablespoons instant coffee powder½ cup milk½ teaspoon baking soda2 teaspoons baking powder1 teaspoon salt½ cup cocoa powderChocolate ganache for drizzling Method1. Preheat oven at 180° C. Line a square baking tin with butter paper. 2. Melt butter, chocolate chips and castor sugar on a double boiler. Keep stirring once a while. 3. Break eggs in a bowl. Add vanilla essence and beat till ribbon consistency is achieved. 4. Heat ¾ cup water in a microwave till just warm. Remove from heat, add coffee powder and mix well. 5. Add coffee decoction to the chocolate mixture, lower heat and stir till well mixed. Switch off heat and mix. Add milk and whisk well. 6. Sift together flour, baking soda, baking powder, salt and cocoa powder into the melted chocolate mixture. Beat till well combined. 7. Add beaten eggs and mix well. 8. Pour the batter in the prepared tin, put the tin in the preheated oven and bake for 45 minutes. Remove from oven, cool and demould.9. Drizzle chocolate ganache on top and serve.
