Ingredients for Bhature:
All-purpose flour 2 cups
Semolina 2 tbsp
Sugar 1 tsp
Baking soda 1/4 tsp
Salt 1 tsp
Oil 2 tbsp
Yogurt 1/4 cup
Baking powder 1/4 tsp
Water as required

Ingredients for Chole:
Oil 1/4 cup
Chickpeas (boiled) 2 cups
Onion (chopped) 2 cups
Tomato puree 2 cups
Red chili powder 1 tbsp
Turmeric powder 1 tbsp
Salt 1 tsp / to taste
Garam masala powder 1 tsp
Ginger garlic paste 1 tbsp
Cinnamon stick (1 inch) 1
Black peppercorns 1/2 tsp
Bay leaf 1
Cloves 1 tsp
Cumin powder 1 tbsp
Coriander powder 1 tbsp
Yogurt 1/2 cup
Kasuri methi 1/4 tsp
Green chilies as required
Water 3 cups
Potatoes (boiled) 1 cup
Directions for Bhature:
1. In a bowl add flour, semolina, sugar, baking soda, salt and mix well.
2. Now add oil, yogurt, water and knead a smooth dough. Let it rest for 15-20 minutes.
3. Now divide the dough into 4 equal parts. Roll them down into flat circle shape while greasing with some oil.
4. Deep fry them until light golden brown in color and puffs and set aside.
Directions for Chole:
5. In a pot heat oil and add onion and cook until translucent. Now add ginger garlic paste and cook for a minute.
6. Add black peppercorns, cinnamon stick, bay leaf, cloves and cook for a minute.
7. Add tomato puree, red chili powder, turmeric powder, salt, garam masala powder, cumin powder, coriander powder and mix well.
8. Add boiled chickpeas and cook for 3-4 minutes. Now add boiled potatoes and mix well.
9. Add water and cook until starts to boil. Add kasuri methi and mix well. Cover and cook for 10-12 minutes on low flame.
10. Now add yogurt and cover and cook for 5-6 minutes or until oil separates.
11. Your chole are ready. serve them with bhature and enjoy.
