Chole in Green Masala in Hindi | Simple & Quick| | Chef Cooking Studio

Ingredients
1 cup chickpeas boiled
1 small onion chopped
1 small tomato chopped
4 fresh green chilly
1 Tbsp ginger-garlic chopped
2 cups chopped fresh cilantro
1/2 cup Mint Leaves
1 Tbsp Cumin Seeds
Whole Garam Masala {Cinnamon, Cardamom ,Star anise}
Salt- To Taste
1/2 Tsp turmeric
1/2 Tbsp Garam Masala Powder
1 Tsp Chana masala
1/2 Tsp Chat masala
1 Tsp Lime juice
1/2 Spinach(Blanched)
1 Tbsp Curd
1 Tbsp vegetable oil
Few cashew nuts for garnish

Method
1.Soak chickpea overnight and drain , pressure cook for 7-8 whistles on medium flame.Allow the pressure to release by itself before opening cooker.
2. Place Green Chilly, cumin seed, ginger-garlic, mint leaves, blanched spinach, coriander leaves and little oil into a blender. Puree until smooth.
3. To cook, heat vegetable oil in a large skillet over medium heat. Add cinnamon , green cardamom and star anise let it splatter then add onion Stir, and cook until the onion softens and turns translucent, add chop ginger garlic sauté then put some chopped tomatoes and sauté till they start releasing oil. further, add the garam masala powder, turmeric, chana masala , chat masala , and salt. Sauté for sometime.
4.Then add puree which you have made add whisk yoghurt sauté until the masala release the oil now put cooked chickpea and ghee mix them well, cover and cook another 2 to 3 minutes. on medium-low flam.
5. Garnish with cashew nuts and Coriander leaves, serve it hot with Roti, Paratha or Rice.
