Chorizo Rice | Sanjeev Kapoor Khazana

Cook together rice, chorizos, cherry tomatoes, olives with herbs to make a delicacy that you will cherish forever

CHORIZO RICE

Ingredients

1 cup cooked rice
8-10 chorizos
1 tablespoon oil
1 tablespoon chopped garlic
1 small onion
6-8 cherry tomatoes
6-8 pitted green olives, sliced
Salt to taste
Crushed black peppercorns to taste
1 teaspoon castor sugar
1 teaspoon paprika
4-6 fresh parsley sprigs, roughly chopped + for garnishing

Method

1. Heat oil in a non-stick pan. Roughly chop chorizos.
2. Add garlic to hot oil and sauté till golden. Add chorizo, mix and saute for a minute.
3. Finely chop onion, add to the pan and saute till golden.
4. Roughly chop cherry tomatoes, add to pan, mix and saute for a minute. Switch off heat and add olives. Switch on heat, add salt, crushed peppercorns, sugar and paprika and mix well.
5. Add rice and mix. Switch off heat and add parsley and mix well.
6. Serve hot garnished with a parsley sprig.
