Chunky Cheese and Vegetable Open Burger

This Chunky Cheese and Vegetable Open Burger has cheese in, out and all through! Loaded with an exciting combo of chunky cottage cheese cubes, crunchy and colourful veggies, and grated processed cheese, this open burger is further topped with mozzarella cheese and baked till the cheeses melt and fuse with the rest of the ingredients. Garnished with a sprig of parsley, this snack becomes too good to resist!

Preparation Time: 20 minutes.
Cooking Time: 5 minutes.
Baking Time: 10 minutes.
Baking Temperature: 200°C (400°F).
Makes 4 open burgers

2 burger buns
Butter for brushing

For the chunky vegetable spread
¾ cup chopped paneer (cottage cheese)
¼ cup chopped and boiled carrots
½ cup chopped coloured capsicum (red, yellow and green)
¼ cup boiled sweet corn kernels (makai ke dane)
¼ cup boiled green peas
2 tsp butter
¼ cup chopped spring onion whites
2 tbsp chopped spring onion greens
1 tsp chopped parsley
¼ cup milk
¼ cup grated processed cheese
Salt and to taste
2 tbsp grated mozzarella cheese

For the garnish
Sprigs of parsley

For the chunky vegetable spread
1. Heat the butter in a broad non-stick pan, add the spring onion whites and sauté on a medium flame for 1 minute.
2. Add the sweet corn, green peas, coloured capsicum and carrot and sauté on a medium flame for 1 to 2 minutes.
3. Add the chopped paneer, spring onion greens, parsley, milk, processed cheese and salt, mix gently and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
4. Divide the spread into 4 equal portions and keep aside.

How to proceed
1. Cut each burger horizontally into 2 equal halves.
2. Apply a little butter on all the bun halves and bake in a pre-heated oven at 200°C (400°F) for 5 to 7 minutes.
3. Place the baked bun halves on a clean, dry surface with the buttered side facing up.
4. Spread a portion of the prepared chunky vegetable spread over each bun halve.
5. Finally top each burger with ½ tbsp of mozzarella cheese and bake in a pre-heated oven at 200°C (400°F) for 5 to 7 minutes, till the cheese melts.
Garnish with a sprig of parsley and serve immediately.
