Churma | Simple Vegetarian Khana With Chef Saurabh | Sanjeev Kapoor Khazana

CHURMA

Ingredients

2 cups coarse whole wheat flour (atta)
4 tablespoons semolina (rawa/suji)
½ cup melted ghee + for deep-frying
Milk as required
¾ cup powdered sugar
10 almonds, chopped
10 cashewnuts, chopped
1½ tablespoons raisins
¼ teaspoon green cardamom powder

Method

1. Take wheat flour in a bowl. Add semolina, ½ cup ghee and sufficient milk and knead into a stiff dough.
2. Heat sufficient ghee in a kadai.
3. Divide the wheat flour mixture into equal portions and press between the fingers and palm.
4. Deep-fry the prepared portions in medium hot ghee till golden brown and crisp. Drain on absorbent paper and cool.
5. Break the fried portions, put in the grinder and coarsely grind. Transfer in another bowl.
6. Add powdered sugar, almonds, cashewnuts, raisins and cardamom powder to the ground mixture and mix well using your hands.
7. Serve.
