Chutney Chicken Vegetable Rice | Sanjeev Kapoor Khazana

A flavorsome chicken and rice dish that makes it a household favourite. The fresh green chutney is a beautiful match to the tender chicken and steaming rice!

CHUTNEY CHICKEN VEGETABLE RICE

Ingredients

¼ cup green chutney
450 grams boneless chicken, cut into small pieces
½ medium red bell pepper, cut into small cubes
½ medium green capsicum, cut into small cubes
½ medium yellow bell pepper, cut into small cubes
½ cup boiled corn kernels
1 cup leftover cooked rice
1 tablespoon oil
1 teaspoon cumin seeds
Salt to taste
1 teaspoon garammasala powder

Method

1. Heat oil in a non-stick pan. Add cumin seeds and sauté till fragrant. Add red bell pepper, green capsicum, yellow bell pepper, corn kernels and chicken, toss to mix.
2. Add salt, green chutney and toss to mix. Add rice, salt and garam masala powder and mix well. Sprinkle some water, mix, cover and cook for 2-3 minutes.
3. Serve hot.

Preparation Time: 5-8 minutes
Cooking Time: 5-7 minutes
