This detailed tutorial shows you how to make two types of chutneys ie sauces used as condiments for Indian cuisine. In this recipe you learn how to make Coriander chutney - a fresh green chutney and Sweet Chutney - a sticky date chutney.

CHUTNEY

Ingredients

Sweet chutney
1 cup chopped dates
½ cup chopped jaggery
Rock salt to taste
½ teaspoon dried ginger powder
Juice of ½ lemon
Coriander chutney
1 large bunch fresh coriander leaves
½ inch ginger
2-3 green chillies
Rock salt to taste
Juice of ⅓ lemon
1 tablespoon raw peanuts

Method

1. To make sweet chutney, pressure cook dates, jaggery, rock salt and dried ginger powder in 2 cups water till 3-4 whistles. Remove from heat and cool.
2. Blend the cooked dates mixture with lemon juice and rock salt to a smooth puree.
3. Transfer back in the cooker on heat, stir and cook till the chutney thickens. Remove from heat and cool.
4. To make coriander chutney, blend together coriander leaves, ginger, green chillies, rock salt, lemon juice, peanuts and very little water to a smooth and thick chutney.
5. Serve both chutneys with your choice of snack.

Cooking Time: 5-8 minutes
