CILANTRO AND CHILLI MARINATED FISH SKEWERS WITH JALAPENO MAYOIngredients3-4 green chillies, chopped½ cup chopped fresh cilantro2 boneless fish fillets, cut into fingers1 tablespoon chopped garlic1 teaspoon mustard paste1¼ tablespoons lemon juiceSalt to taste1 tablespoon oil + for grilling Zest of 1 lemon ¼ cup mayonnaise2-3 jalapenos, finely chopped1 small red bell pepper, choppedMethod1. Blend together garlic, green chillies, mustard paste, cilantro, 1 tablespoon lemon juice, salt and oil into a fine paste. Transfer in a bowl. Add lemon zest and mix well. Add fish fingers, mix well and refrigerate to marinate for ½ hour.2. To make jalapeno mayo, combine mayonnaise, jalapenos, remaining lemon juice, bell peppers and salt in a bowl and mix well.3. Insert one marinated fish finger onto individual 6 inch skewers.4. Heat some oil in a non-stick grill pan. Place the skewers in it and grill till evenly done from all sides.5. Serve hot with jalapeno mayo and lemon wedges.
