Cinnamon Crumb Banana Loaf | Sanjeev Kapoor Khazana

The legendary combination of bananas and cinnamon comes alive in this delicious Cinnamon Crumb Banana Loaf recipe.

CINNAMON CRUMB BANANA LOAF - (Serves - 4)

Ingredients

1 teaspoon cinnamon powder
2 medium bananas
½ cup butter + for greasing
2 cups refined flour for dusting
1 cup castor sugar
1 egg
1 teaspoon vanilla essence
½ cup buttermilk
½ teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
Crumb
4 tablespoons butter
½ cup refined flour
½ teaspoon cinnamon powder
½ cup powdered sugar

Method

1. Preheat oven to 180° C. Grease a loaf tin with some butter and dust with some flour.
2. Cream together butter and castor sugar in a bowl using an electric beater. Add egg and whisk well.
3. Peel and chop in bananas. Add vanilla essence and whisk. Add buttermilk and whisk well.
4. Sieve together flour, baking soda and baking powder into the banana mixture. Add cinnamon powder and salt and fold well.
5. Transfer the prepared banana mixture into the greased loaf tin and tap.
6. To make crumb, combine butter and flour in a bowl and mix well using hands. Add cinnamon powder and mix. Add powdered sugar and mix well using hands till it resembles breadcrumbs.
7. Spread the crumb mixture on top of banana mixture. Put the tin in preheated oven and bake for 40-45 minutes. Remove from oven, cool and demould.
8. Slice and serve.
