I don't know how they do it. But this size was fine; I got about 20 meatballs from a pound of meat, which was perfect. I seared the meatballs too, which is not technically traditional, but meatballs are not technically traditional either, so this is a flavor-based decision. Searing the meatballs and then cooking the soup with those yummy browned bits left behind makes for a tasty final result!
