'Clean Out The Fridge' Masala Roasted Vegetable Soup Recipe - Glen And Friends Cooking
Looking for an easy vegan friendly vegetable soup? This is almost a cream of vegetable soup recipe, a roasted curry vegetable soup... Glen cooks a simple inexpensive creamy vegetable soup recipe. Two tweaks and this is a creamy vegan soup recipe.

Ingredients:
1 large onion, chopped
1-2 carrots, chopped
1 bell pepper, chopped
1 potato, chopped
1 sweet potato, chopped
1 hot pepper, chopped
1 small head cauliflower, cut into small florets
60 mL (4 Tbsp) oil *Approx
45 mL (2 Tbsp) garam masala
5 mL (1 tsp) salt
5 mL (1 tsp) ground pepper
1 mL ( tsp) cayenne pepper
Garlic, minced
Thumb grated fresh ginger
500 mL (2 cups) canned or fresh tomato
1L (4 cups) broth
250 mL (1 cup) cream - or dairy substitute


Method:
Preheat oven to 230C (450F).
Toss chopped veg with oil, salt, pepper, cayenne, and garam masala.
Spread in a single layer on a rimmed baking sheet, and roast until caramelized and golden.
Heat a little oil in a large pot over medium-high heat.
Add garlic and ginger; fry just until fragrant.
Add the roasted veg to the pot - holding back some / all of the cauliflower for garnish.Stir in tomato, and broth; cover and simmer over medium low heat for 30-45 minutes.
Use a stick blender to smooth out the texture, add the cream, and serve with roasted cauliflower floating on top.
