Clean Out The Fridge Soup Recipe - Glen And Friends CookingIngredients:45 mL (3 Tbsp) oil500g (1 lb) stewing beef, cut into cubesSalt and pepper to taste1 diced onion1- 2 ribs diced celery1-2 diced carrots45 mL (3 Tbsp) tomato paste500 mL (2 cups) stewed tomatoes5 mL (1 tsp) dried thyme1 bay leaf1.5L (6 cups) chicken stock30 mL (2 Tbsp) Marmite500 mL (2 cups) diced squash250 mL (1 cup) frozen corn250 mL (1 cup) frozen peasMethodSeason beef with salt, pepper. In a Dutch oven, heat the oil over medium-high heat; then brown beef on all sides. Stir in onions, celery and carrots over medium heat, scraping up fond as you go, until tender and onions are translucent. Stir in Tomato paste, and cook to caramelise the sugars.Add thyme, bay leaf, stock and Marmite.
