COBAN PILAVI I SHEPHERD'S PILAF RECIPE I Bulgur pilaf with veggies and potato

In this episode, I'd like to share with you 'oban Pilav', (shepherd's pilaf) recipe, from Isparta city of Turkey. It is a simple bulgur pilaf, made with some veggies and potato. Easy to make and tastes so yummy. Hope you give it a try.

INGREDIENTS (serves 4)
1 onion, cut into cubes
1-2 long/sweet green pepper, cut into cubes
1 medium potato
1 cup bulgur
2.5 cups hot water
1/2 cup tomato puree
1 heaping tsp tomato paste
A pinch of sweet paprika and granulated sugar
1/4 cup olive oil, 2 tbsp butter
Salt & pepper

DIRECTIONS
Rinse and drain bulgur.
Peel the potato, and cut into approximately chickpea size cubes.
In a large pan, heat olive oil and butter, over medium low heat.
Add the onion, sprinkle a pinch of salt and pepper.
Sautee for about 3 minutes, or until slightly tender, stirring occasionally.
Add green peppers, sautee for about 3 minutes, stirring occasionally.
Sprinkle a good pinch of sweet paprika.
Add tomato paste and cook for 1 minute, stirring constantly.
Add tomato puree.
Sprinkle a pinch of sugar, mix.
Add bulgur and potato.
Mix well, until everything is covered with the sauce.
Add 2.5 cups hot water.
Add 1.5 leveled tsp or to taste salt, a pinch of black pepper.
Mix and bring to a boil, over medium high heat.
Then, reduce heat to the lowest possible setting.
Cover and cook for about 18-20 minutes or until water is absorbed.
Shake the pan to mix, occasionally.
Make sure to check the water level at the bottom of the pan, with a spoon.
Turn off the heat.
Cover the pan with paper towels and the lid.
Let rest for about 10-15 minutes.
Mix gently.
Transfer to a serving plate and enjoy.
It tastes amazing, using potato in pilaf is a very good idea!
