Coconut Cream Spinach | Sanjeev Kapoor Khazana

This creamy coconut-y Spinach dish is surely a loved one as it hits all the right spots! A great way to eat spinach and pack those nutrients into your diet!

COCONUT CREAM SPINACH

Ingredients

¼ cup coconut cream
½ medium bunch spinach, blanched
1 tablespoon olive oil
1 tablespoon butter
1 tablespoon chopped garlic
1 medium onion, sliced
½ teaspoon sugar
Salt to taste
Crushed black peppercorns to taste
1 teaspoon paprika
½ teaspoon nutmeg powder
1 tablespoon grated cheddar cheese
1 tablespoon grated parmesan cheese + for garnishing
Almond slivers for garnishing

Method

1. Heat olive oil in a non-stick pan. Add ½ tablespoon butter and garlic and sauté till garlic turns golden. Add onion and sauté till golden. Add sugar, mix and cook for a minute.
2. Take blanched spinach reserving excess water, roughly chop, add to pan and mix well. Add some spinach water and mix well. Add salt, crushed peppercorns, paprika and nutmeg powder and mix well.
3. Reduce heat, add coconut cream and mix well. Add cheddar cheese and mix well. Add parmesan cheese, mix and cook till the mixture slightly dries.Switch off heat, add remaining butter and mix well.
4. Serve hot garnished with parmesan cheese and almond slivers.

Preparation Time: 5-8 minutes
Cooking Time: 10-12 minutes
