Coconut Macaroons | The Dessert Queen - Neelanjali | Sanjeev Kapoor Khazana

These simple 6 ingredient coconut macaroons have a texture and taste that you just cant get enough off - so hard to stop at one.

COCONUT MACAROONS

Ingredients

191 grams desiccated coconut
2 egg whites
A pinch salt
140 grams castor sugar
1 teaspoon vanilla essence
2 tablespoons refined flour (maida)

Method

1. Preheat oven at 165° C. Line a baking tray with a silicon sheet.
2. Whisk egg whites with salt, castor sugar and vanilla essence till soft peaks are formed.
3. Add flour and keep whisking till well mixed. Add desiccated coconut and fold well. Cover with a cling film and refrigerate for 4-5 hours.
4. Divide the mixture into equal portions and place them on the lined tray. Put the tray in the preheated oven and bake for 20-25 minutes. Remove from oven and cool.
5. Serve.
