Coconut Paneer Curry Recipe (Mothers Day special lunch recipes) | Eat East Indian

Ingredients/ Method

400 gms Paneer - Cubed
2-3 tbsp oil
1/2 tsp cumin seeds
1/2 tsp crushed coriander seeds
1/2 tsp red chilli pwd
1 tsp turmeric pwd
1 small onion chopped
1 cup of coconut milk
small piece of ginger-garlic chopped ( or 1 tbsp ginger garlic paste)
1 tsp salt
1 small chopped tomatoes
1 tbsp curry powder
cilantro for garnish
200 gms julienned red-green cabbage and carrots ( using coleslaw mix makes it easy)

Method:

- In a pan/wok, add 2-3 tbsp oil and fry cumin and coriander seeds.
-Mix in onions and spices. Add ginger garlic.
- Fry for another 2-3 mins. Add cabbage and carrots. Mix well. saute for 2-3 more mins. Add tomatoes and let them become tender.
- Add paneer pieces. Mix well and add curry powder and coocnut milk. Cook further for 2-3 mins and then garnish with cilantro and
serve warm with Roti.
