This deliciously nutty poli is stuffed with the goodness of coconut and jaggery! The combination that can never go wrong.

COCONUT POLI

Ingredients

1½ cups whole wheat flour
4 tsps oil + for drizzling
¾ cup scraped fresh coconut
½ cup jaggery powder
½ tsp green cardamom powder
A pinch nutmeg powder
Ghee for drizzling

Method

1. Take whole wheat flour, 2 tsps oil and ½ cup water and knead to a soft dough. Drizzle remaining oil and knead again. Cover and set aside for 1-2 hours.
2. For the stuffing, roast coconut in a non-stick pan till the moisture evaporates and turns light golden brown.
3. Add jaggery powder, green cardamom powder, nutmeg powder and mix and cook till the jaggery melts. Transfer on to a plate and allow the mixture to cool to room temperature.
4. Divide the dough into equal portions and shape each portion into a ball. Stuff each ball with a portion of the stuffing and press the edges to seal. Drizzle oil on top and roll into small discs.
5. Heat a non-stick tawa, place the discs and cook for 1-2 minutes on each side, drizzle with ghee on both sides.
6. Arrange on a serving plate, serve hot with ghee.
