South East Asian classic - right from the streets to 5 starts. sticky sweet coconut rice served with dices of fresh mango.COCONUT RICE WITH MANGO - (Serves - 4)Ingredients3 cups coconut milk2 medium mangoes, peeled, deseeded and cut into small pieces1½ cups Jasmine rice2-3 tablespoons grated jaggerySalt to taste1 teaspoon vanilla essenceFresh mint sprig for garnishingMethod1. Heat rice in a small deep non-stick pan and sauté till light brown. Add coconut milk, mix, cover and cook till rice is ¾ done.2. Add jaggery, mix and cook till rice is fully cooked. 3. Add salt and vanilla essence and mix well. 4. Place a large cookie cutter on a serving platter and put cooked coconut rice filling ½ of it. Put mangoes on top and level it out.5.
