Coconut Rice With Mango | Sanjeev Kapoor Khazana

South East Asian classic - right from the streets to 5 starts. sticky sweet coconut rice served with dices of fresh mango.

COCONUT RICE WITH MANGO - (Serves - 4)

Ingredients

3 cups coconut milk
2 medium mangoes, peeled, deseeded and cut into small pieces
1½ cups Jasmine rice
2-3 tablespoons grated jaggery
Salt to taste
1 teaspoon vanilla essence
Fresh mint sprig for garnishing

Method

1. Heat rice in a small deep non-stick pan and sauté till light brown. Add coconut milk, mix, cover and cook till rice is ¾ done.
2. Add jaggery, mix and cook till rice is fully cooked.
3. Add salt and vanilla essence and mix well.
4. Place a large cookie cutter on a serving platter and put cooked coconut rice filling ½ of it. Put mangoes on top and level it out.
5. Demould and serve immediately garnished with a fresh mint sprig.
