Watch the video to know how to make the recipe.CONGEEIngredients1 cup rice, soaked1 cup chicken stock5-7 garlic cloves, crushed1 inch ginger, slicedSalt to taste1 spring onion with greens4-6 dried shiitake mushrooms, soaked2 tablespoons sesame oil1 inch ginger, cut into juliennes100 gramsbonelesschicken, boiled and shredded2 tablespoons light soy sauce1 tablespoon red chilli sauceMethod1. Heat stock in a non-stick pan. Add rice, garlic, ginger and salt.2. Slice 1 spring onion bulb reserving the greens, add to pan, mix and bring to a boil. Cover and cook on medium heat till rice is fully done.3. Roughly chop mushrooms.4. Heat 1 tablespoon sesame oil in another non-stick pan. Add ginger juliennes and chopped mushrooms and sauté on high heat. 5. Add chicken, salt and 1 tablespoon soy sauce and toss to mix. Remove from heat and transfer into a bowl.6. Add remaining soy sauce and remaining sesame oil to rice mixture, mix, cover and cook for 2 minutes.7. Finely chop spring onion greens.8. Put the rice mixture into a serving bowl and top with some mushroom-chicken mixture, chilli sauce and chopped spring onion greens on top. 9.
