Congee | Sanjeev Kapoor Khazana

Congee is had during the winter season and is regarded as the Chinese comfort food. Watch the video to know how to make the recipe.

CONGEE

Ingredients

1 cup rice, soaked
1 cup chicken stock
5-7 garlic cloves, crushed
1 inch ginger, sliced
Salt to taste
1 spring onion with greens
4-6 dried shiitake mushrooms, soaked
2 tablespoons sesame oil
1 inch ginger, cut into juliennes
100 gramsbonelesschicken, boiled and shredded
2 tablespoons light soy sauce
1 tablespoon red chilli sauce

Method

1. Heat stock in a non-stick pan. Add rice, garlic, ginger and salt.
2. Slice 1 spring onion bulb reserving the greens, add to pan, mix and bring to a boil. Cover and cook on medium heat till rice is fully done.
3. Roughly chop mushrooms.
4. Heat 1 tablespoon sesame oil in another non-stick pan. Add ginger juliennes and chopped mushrooms and sauté on high heat.
5. Add chicken, salt and 1 tablespoon soy sauce and toss to mix. Remove from heat and transfer into a bowl.
6. Add remaining soy sauce and remaining sesame oil to rice mixture, mix, cover and cook for 2 minutes.
7. Finely chop spring onion greens.
8. Put the rice mixture into a serving bowl and top with some mushroom-chicken mixture, chilli sauce and chopped spring onion greens on top.
9. Serve hot.
