Cookie Ice Cream | Sanjeev Kapoor Khazana

Chocolate cookie ice cream sandwiches with thick, chewy chocolate cookies and your favorite ice cream.

COOKIE ICE CREAM

Ingredients

8-10 dark chocolate cookies
300 ml milk
200 ml fresh cream
4 egg yolks
1 teaspoon vanilla essence
125 grams castor sugar

Method

1. Heat milk and cream in a non-stick pan and bring to boil.
2. Separate egg yolks from egg whites. Add vanilla essence and castor sugar to yolks and whisk till well incorporated.
3. Add some boiled milk-cream mixture to egg mixture and whisk. Add remaining milk-cream mixture gradually and whisk well.
4. Transfer the mixture into same non-stick pan, place on heat, stir continuously and cook the mixture on low heat till it thickens.
5. Strain the prepared mixture in another bowl and cool. Transfer in an air-tight container, cover and put in freezer for 3-4 hours.
6. Transfer ice cream in an electric food processor and blend to make a smooth mixture. Add broken cookies, discard the blade from the processor and mix well.
7. Transfer the ice cream mixture back into the same air-tight container and put in freezer for 8-10 hours
8. Serve chilled.
