Chocolate cookie ice cream sandwiches with thick, chewy chocolate cookies and your favorite ice cream.COOKIE ICE CREAM Ingredients8-10 dark chocolate cookies300 ml milk200 ml fresh cream4 egg yolks1 teaspoon vanilla essence125 grams castor sugarMethod1. Heat milk and cream in a non-stick pan and bring to boil.2. Separate egg yolks from egg whites. Add vanilla essence and castor sugar to yolks and whisk till well incorporated. 3. Add some boiled milk-cream mixture to egg mixture and whisk. Add remaining milk-cream mixture gradually and whisk well.4. Transfer the mixture into same non-stick pan, place on heat, stir continuously and cook the mixture on low heat till it thickens.5. Strain the prepared mixture in another bowl and cool. Transfer in an air-tight container, cover and put in freezer for 3-4 hours.6. Transfer ice cream in an electric food processor and blend to make a smooth mixture. Add broken cookies, discard the blade from the processor and mix well.7. Transfer the ice cream mixture back into the same air-tight container and put in freezer for 8-10 hours8.
